It sure smells like fall in our house

It might feel like summer outside, like it always does here in Puerto Rico and like my husband constantly reminds me,  but it sure smells like fall in our house.

The way of me getting in the mood with my favorite season of all, besides Coquito, it is baking Pumpkin and Cheesecake Pie. This pie made with local pumpkins is the ultimate crowd-pleasing and fun dessert with layers of rich spiced pumpkin filling and creamy cheesecake. SO SO flavorful. And the crust…is definitely to die for! This pie is officially the new tradition in my family and and it could be yours as well. 

Definitely, Thanksgiving pies never looked so good, and you should consider adding it to your holiday dinner menu. 

Besides this being my favorite because of how delicious it is, it's also my favorite cause it's so easy to make. I love this pie so much and while my recipe wanna keep it for TAMID only for now, I am very happy to share all the steps with you. You'll only need four things: Great graham crust recipe, a creamy cheesecake filling, your best pumpkin batter and your favorite cool whip. 

First, preheat your oven. Once that is done you got to start making your graham crust, if you are not in the mood of crushing some cookies it could be store bought., it should be fine.  But if you are making your own crust, press it down in your baking pan and pop it in the oven. When making your crust never be shy to experiment a little with it, there a tons of ways and flavors you may add to it.  For example, my classic crust for cheesecakes is made of the cake crumbs I cut while working on my cakes and IT IS delicious.  You may add to it nuts to have some extra texture or spices to make much much flavorful. Endless possibilities when making your crust. 

Now, that you have you crust done we are ready to go to the next step: cream cheese filling. Make your filling and pour it all over the crust, make sure you are spreading this layer evenly. And again back to the oven. In this part, the baking time of your cheesecake layer depends on how thick or how thin is. So is very important to continue checking it from time to time. Don't loose sight of your cheesecake, you'll know it's done when it only jiggles a little in the center. Once you see that, you can take it out of the oven. Let it stand for a few minutes before adding the pumpkin filling. 

Now it's time for the best layer. Add your pumpkin filling and repeat the last step. Always remember that the baking times will depend on your oven, the pan you used and the amount of batter you are putting in each layer. 

Once your pie is done and cooled off,  it is time to decorate.  I use whipping cream and flavor it with some vanilla, as simple as that.  It is nice and refreshing, not too sweet which give you the opportunity to actually enjoy your pie. Spread some over your pie and you are DONE!!!  Ready to enjoy nice and cold. 

This pie is absolutely AMAZING! And the warm smells you'll get all over your house is so rewarding for all the baking and your guests will be delighted. I pair this pie with a cup of hot cocoa to finish my Thanksgiving dinner the right way.  Hope you guys enjoy it as much as I do.
